I’ve tried many adaptations of the pancake recipe I had memorized. I tried EnerG Egg Replacer, honey (I know, not exactly vegan), bananas, and other thickners. Then one day I made the pancakes without any thickener. Here’s the recipe I use most frequently.
1 Cup bleached flour
1 Cup whole flour
2 Tablespoons sugar
2 Cups soy milk
Mix all those into a bowl, preferably one well suited for pouring into a fry pan.
Then grease the frying pan with Earth Balance soy “butter.” This is the key to getting good results. Other soy butter brands *can* work, but Earth Science seems best. Also I like to fry the pancakes on meduim heat, keeps them from burning quickly.
